Twice Baked Potatoes
Joe's Crab Shack Copycat Recipe

Serves 4-8

4 large potatoes, baked
1/2 cup sour cream OR cream cheese
1/2 cup butter OR margarine, softened
1/2 cup shredded cheddar cheese
1/4 cup cooked, crumbled bacon
1/2 teaspoon salt
1/4 teaspoon black pepper
2 scallions, diced

Cut potatoes in half lengthwise and scoop potato out of the skins and into a bowl. Add remaining ingredients to bowl and beat until fluffy. Bake in a 400 degree oven for 20 minutes.
