Salad del Greco


The Salad del Greco is a classic Greek salad with the usual ingredients of black olives, tomatoes and feta cheese and Joe's Crab Shack offers a twist with your choice of shrimp scampi, mesquite grilled chicken or grill shrimp.

The latest trend on restaurant menus  is recreating old classics. Try this version of a Greek salad. I love a Greek salad. Usually, it is overdone and bad. This version is simple and fresh with a lemony dressing.  It is fabulous for a hot weather lunch or dinner and perfect on a party platter, too.

Joe's Crab Shack Copycat Recipe

Serves 4 as a starter or 2 for lunch

Salad
1 head of romaine lettuce; washed, dried and cut into ten in pieces
1 large ripe tomato cut into wedges
1/2 of a red onion sliced and separated into rings 
1cup of crumbled feta cheese
1/2 cup of black olives, in brine
1 English cucumber
1 pound of shrimp, peeled, deveined, and grilled.
 
Vinaigrette
Juice of 2 lemons
¼ cup of white wine vinegar
1 teaspoon dried oregano
2 tablespoon fresh dill
½ teaspoon salt
 
To make the Vinaigrette:  Combine all the ingredients into a jar just the lid on and shake to xix well. Add ½ cup plus 1 tablespoon of good olive oil and shake again to blend well.
 
To Make Salad:  Arrange the vegetables on salad on plates.Top salad with hot shrimp feta and olives. Drizzle with dressing. Top with fresh ground pepper.

Notes:  Marinate the shrimp in some of the vinaigrette before grilling to tie all the flavors together. The picture below demonstrates how you can turn your salad into nice sandwiches by adding extra grilled vegetables and some pita bread.
