Crab Pico de Gallo


Crab Pico de Gallo
Joe's Stone Crab Shack Copycat Recipe


For Pico de Gallo
2 medium tomato, diced
1 small onion, chopped
1 large or 2 medium jalapenos, seeds removed and diced
¼ cup cilantro, chopped
1 medium lime
Garlic powder
Pepper
(Or substitute prepared fresh pico de gallo)

4 cups leafy greens
8 ounces fresh lump crabmeat
1 small avocado, diced
2 teaspoons olive oil
Juice of 1 medium lime

Prepare pico de gallo by tossing all diced ingredients and sprinkling to taste with garlic powder and pepper.  Gently fold in fresh lump crabmeat.  Then add and gently toss the diced avocado. Plate 2 heaping cups of leafy lettuce on two plates.  Drizzle lightly with extra virgin olive oil.  Squeeze the juice of the fresh lime over each salad.  Top with a generous portion of the pico crab mixture. Enjoy the healthy addition of fresh crab, colorful vegetables, and a taste of Mexican flare without all of the calories!  Pico crab avocado mixture can also be used as a dip…just watch the chips!
